What happens during a restaurant inspection?

Maricopa County health inspectors cited one restaurant for four health violations during the week of Jan. 26. The violations ranged from employees washing their hands for just five seconds after handling raw sausages to potentially toxic levels of disinfectant used to clean the store. A workbench filled with cups of ranch dressing.
Priority violations are serious violations that directly lead to an increased risk of food poisoning or food injuries. If noted in the inspection report, the remedial measures implemented during the inspection will be noted.
During the week of January 26, inspectors visited more than 1,320 restaurants and other food service facilities in hospitals, nursing homes and schools. More than 180 restaurants received an “A” rating. At the end of this article, see a sample of many restaurants rated “A” by inspectors.

Barro’s Pizza, 1130 W. Grove Ave., Mesa
- The employee took less than 5 seconds to wash his hands after removing the dirty gloves that had been used to handle the raw sausage. The employee washed his hands again for the required 20 seconds.
- Pizza sauce and shredded mozzarella cheese were stored at 51 degrees Fahrenheit to 55 degrees Fahrenheit at the pizza station. The material will sit for up to two hours, then be returned to a prep cooler to cool to 41 degrees Fahrenheit, officials said. The personnel returned the food to the walk-in refrigerator to cool it quickly.
- An unlabeled spray bottle, which officials identified as a 500 ppm or higher disinfectant, was used to clean work surfaces where lunch cups were being filled. Disinfectants above 400 ppm can be toxic. The person in charge diluted the spray solution to 200 ppm.
- Spray disinfectant was stored on top of the pizza box insert, and a bottle of degreaser was stored on the bottom shelf of the prep table next to the wing sauce. Neither bottle had a label. The manager moved the spray bottle to another area.
